2 Dozen Reindeer (day 2)
And a Cream Cheese Bonanza Caaaake (day 1 )… see where I’m going with this? (no, I don’t remake everything)
I brought the Bonanza cake and Reindeer cupcakes to work today and they were a great hit!! My story was I had “bananas” for breakfast and “pretzels and nilla wafers” for snacks… but a whole lot of sugar around all of it! So this afternoon during the office’s Healthy Hour, a co-worker and I ran 4.5 miles. Makes the cake worth every bite.
Another person at work asked if I was going to throw in some healthy stuff, or meals instead of just desserts… I had to say NO WAY! Even though I think my hair now permanently smells like sugar and my fingers are prunes from washing so many dishes.
Today my step brother, Bryan, came in to town from Tampa and leaves tomorrow for Colorado… another person who’s going to miss all the yummy treats next week! To send him and my stepmom, Sally, off in style, they now have cookies to pack!
Today’s cookie is 3 dozen festive peanut butter blossom. This is a family favorite, probably the cookie that started the baking tradition and a must have at Christmas even if it’s not a traditional Christmas treat. So, I’ve made this recipe a little more Christmasy! This is also a VERY simple recipe and my family usually doubles this!!
Festive Peanut Butter Blossoms Ingredients (3 dozen cookies)
- 1/2 cup butter
- 1/2 cup creamy peanut butter
- 1 cup sugar, separated 1/2, 1/4 and 1/4
- 1/2 cup packed brown sugar
- 1 egg
- 1 tsp vanilla
- 1 3/4 cup flour
- Hershey kisses
- Preheat oven to 350 degrees.
- Cream butter, peanut butter. 1/2 cup sugar and brown sugar in KitchenAid Mixer using the paddle attachment.
- Add egg and vanilla and beat until smooth.
- Mix in flour.
- Shape the dough in round balls, no bigger than the size of a quarter in diameter. Place all dough balls on parchment paper on cookie sheets.
- In a small bowl, mix 1/4 cup sugar with a few drops of green food coloring until well blended. Repeat with remaining 1/4 cup and red coloring.
- Roll the balls into one of the colored sugar bowls and place back on cookie sheet.
- Bake for 6 minutes (yes, only 6). While these are baking, start unwrapping 36 Hershey kisses.
- After 6 minutes, remove from oven and top the cookies with a kiss and press down until the cookie starts to crack.
- Put back in oven for 2-5 minutes. This part is critical to get the chocolate to stick on the cookie and soften the chocolate.
- Remove and let cool.
That’s it! The pictures below depict each step in the process. This is a very common recipe, but as always, I like to add my touch… today was the green and red colored sugar. I also used the Hershey kisses with caramel for half of the cookies.
And remember, never leave the kitchen with a clean apron!
I feel like peanut butter and chocolate are the dessert lovers peanut butter and jelly. That’s just how good the two go together! I don’t soften the butter because that will make the batter sticky/soft. Instead I let it get close to room temperature and put in the mixer!
This recipe calls for sifted flour… Sifting flour is like squeezing a stress relief ball… I have made these cookies without sifting the flour and did not see a huge difference. Save yourself some time and don’t sift!
You know the commercial, “the best part of waking up is Folgers in your cup?” Well the best part of peanut butter is the Hershey kiss placed on top!
The colored sugar was a new area for me with these cookies. I wanted to be festive and this was a VERY EASY way to do that. I also ALWAYS use parchment paper. First of all, it is a super easy clean up, transfer etc. Also, the cookies will never stick. Using parchment paper is like adding more vanilla… it’s a must.
This is after the cookies bake for 6 minutes and right after you put the kisses on top, put the pans back in the oven. This helps the chocolate stick to the cookie and makes the chocolate softer. IF you overcook, you will burn the chocolate!
