I haven’t made cupcakes in a while so this past weekend it’s time I bake something!  I was trying to find healthier alternatives when I stumbled upon a recipe for oatmeal blueberry cups on Pinterest (of course!).   Best parts are there is no flour, no sugar and no salt. (and I used to think those were the best parts)

So my dad is the cookie monster… he even sometimes busts into cookie monster’s voice.  As the cookie monster, he eats devours ice cream, chocolate, brownies, cookies, cakes etc. I think this is where I got my sweet tooth. 🙂   He buys low-fat frozen yogurt and always eats double, since it’s low fat and yogurt so “It’s not like eating regular ice cream. You can eat more because it’s half the fat.” Well it does make sense mathematically (mathlete here)!

Whether you agree or not, that was my theory going into this recipe.  I thought, the healthier it is, the more I can eat!  It actually turned out pretty good!

Oatmeal Blueberry Cups

  • 3 mashed ripe bananas
  • 1 cup skim milk
  • 2 egg whites
  • 3 cups rolled oats
  • 2 tsp vanilla
  • 1 tbsp baking powder
  • 1 tbsp cinnamon
  • 1/2 tsp nutmeg
  • 1 cup blueberries

Directions: Mix all ingredients together.  Add the blueberries last.  Divide into cupcake liners, sprayed with cooking spray.  Bake at 375 degrees for 20-25 minutes.

Alternative:  Oatmeal + Blueberry + Chocolate Bars:

I didn’t use all the batter in the first batch so I decided to try to make a bar and add some chocolate (ok, so not healthy anymore!).  Spread batter in a thin layer and top with chocolate chips.  Bake 375 degrees for 15 minutes.  Remove from oven and spread the chocolate around so it makes a thin layer of chocolate.  Bake for another 5 minutes or so.

Cut and serve for a healthy somewhat healthy dessert!
