Polka Dots and Berries

You know you have a Groupon problem when you get something in the mail and can’t remember what you bought… luckily, I don’t have this problem (yet).  However, you know you are a foodie with a problem when the highlight of your day week is opening your Groupon Goods purchase to find the apron you can’t wait to put to use!

So here it is.  My Groupon purchase.  A pink, black and white polka dot apron. 🙂


Tonight I made a Berry Filling for a cake.  It was super easy and quick.  I’m not a cranberry fan.  Actually, I really don’t like cranberries but this filling is really sweet and delicious! (Note: cake will come later)

Berry Filling: Combine 1 cup fresh cranberries, 1 cup fresh raspberries, 1/2 cup sugar and 3 tbsp water into a saucepan.  Heat over medium for 4-5 minutes, or until cranberries start popping.  In a small bowl or cup, mix 2 tbsp cornstarch and 1 tbsp water.  Add cornstarch to saucepan and stir for 1 minute.  Add 1 cup chopped fresh strawberries and 2 tbsp butter.  Stir until melted.  Remove from heat and let cool.  Cover and chill overnight.

Besides realizing that I’m pretty lame tonight and have a potential growing groupon problem (ok, not a profound reality, but a reminder!), I have been thinking of other random thoughts:

  1. My alarm clock and I have a love hate relationship. 
  2. Book clubs make reading more fun.
  3. Red wine is delicious.
  4. Road cycling is fun.
  5. Calling food “breakfast food” seems to disqualify it as lunch or dinner items and that should be outlawed starting with waffles….

I had extra chopped strawberries so I tossed them on top of waffles, poured a glass of milk and enjoyed my dinner!
