Groundhog Day?!

Have you ever felt the way Phil Connors (Bill Murray) feels in the movie Groundhog Day?  He relives the same day over and over until he re-examines his life and priorities.   Aside from the fact that this movie is full of truth, it is hilarious.   I laugh so hard every time I see it!

cpa-study-unf-day1I had my own Groundhog Day experience today.  I was at the UNF library for the second day in a row, sitting in the same room, drinking my grande skinny vanilla latte (hello grande!  I usually get a tall so I’m bouncing off the walls right now) and studying for 3 hours for the CPA exam…  All what seemed to be an exact repeat of yesterday!  I couldn’t help but laugh a little (in the “quite” room!) and think about the movie.  Then I laughed (again in the quite room – alumni can break the rules, right?!) at the thought of school and reflecting on all the fun times I had at UNF, the friends I made and how glad I am to be done with that chapter in my life!  Now I have a new chapter, the CPA exam, that is consuming every ounce of me!!  Way.worse.than.school.ever.was.

cpa-study-unf-day2I take the BEC section of the CPA exam this Friday morning and I would be lying if I told you I’m not nervous.  I’m freaking out!!  I’m super nervous and anxious (<— could be the large amount of coffee I’ve consumed this week!) but will be so glad once this test is over.

To break the monotony of this routine, I decided a cupcake break at Sweet by Holly was a must!  I also had a card for a FREE cupcake that I’ve been saving for a rainy day.  It rained yesterday so, you know, excuse to redeem!

This was my first time trying the Nutella Cupcake and it was delicious!!  Nutella, cinnamon and buttercream. Need I say more?!

I also came across this ebib on ilovetorun.org and I thought, “spot on!  Sums it all up!” My favorite is #2 – I’m always drinking water!  I feel like a camel some days and my co-workers probably think I have a water drinking problem!  (I might!)

Now back to the books for the final 24 hours of cramming until test time!!  I’m dreaming of a lovely glass of wine followed by sleeping in late and not logging into Becker for just one day… well a girl can dream!

My life as an ecard

You know that moment when you read an an ecard and think to yourself “HA, ya that’s me” or “yup, agreed?” Well I had an all too perfect moment of this last night.

Here’s the scene: I found a gift card to Dick’s Sporting Goods in my wallet (<— finding unused gift cards = cha ching!)

So naturally I thought hmmm what do I ‘need’ for my half marathon training? I decided I needed a foam roller (as a precautionary measure and to avoid physical therapy later) and new running shorts (because it gets hot in Florida and a girl’s gotta look better than she feels). Then I had a coupon for $10 off $50 (double plus!!) and since my total wasn’t quite there, new ear buds were a must have as well.

This weekend my training program for Napa (happy dance) began! Lots of thoughts rushed through my head (the color of the shorts) and I was definitely satisfied with the results (delivery in 5-7 days!). So let me introduce you to my ‘ha- ya that’s me ecard’ <— which I saw on Facebook moments after the purchase…

I am now t-minus 4 days to my CPA exam and besides having nightmares that I completely tank it, this was another ecard I had to laugh, and agree, with.

In all honesty, my training really did only consist of getting gear to look the part!  (yikes… procrastinator?!) Oh and since my half is in NAPA, I thought I would start training for all aspects… vino tasting, oh course!  Zooma Women’s Half Marathon in Napa, here I come!

3 Ingredients to Paleo Pancakes

Friday morning I woke up at 5am.  Typically, I would take the dog out and then go back to bed.  But yesterday I was feeling well rested and decided getting up 1.5 hours early was a good idea. <— it was!  I cleaned, took Emmie on a long walk and made breakfast! I love breakfast but I don’t take the time to sit down and enjoy it in the morning.  Usually I eat it on the way to work.  (it being cereal – from a plastic cup) But not this morning!   This morning I decided to enjoy breakfast on the porch.  In a “get-up-early-be-productive-and-do-something-good-for-myself” mood I was in, paleo pancakes were a must!

The Paleo Diet is also known as the caveman diet.  Essentially, what cavepeople ate, is Paleo approved.  The Ultimate Paleo Diet Food List is a great source for the dos and don’t of Paleo.  I made a very yummy Thai Red curry Spaghetti Squash with Chicken dish that was specifically Paleo friendly.

For breakfast I mixed 3 ingredients and made a very delicious “pancake.”  Paleo-pancake-ingredients

  • Eggs – packed with protein, omega-3 fats and vitamin!  <— ok, I didn’t go with cage-free organic eggs, but eggs > no eggs, right?
  • Bananas – hello potassium!
  • Cinnamon – The smell boosts brain functioning… CPA is 6 days away!

 

The ratio should be 1:1 but if you have a big banana (like I did), I just used 1 banana and 2 eggs.  The banana makes the batter thicker so play it by ear…

I love cooking with coconut oil!  I lightly coated the pan with coconut oil to give the pancake a crispier outside.

Cook the pancakes in the frying pan and wah-la!  Breakfast served!

For dinner, I made grilled steak kabobs and used the Weber Grill Chicago Steak Seasoning.  Oh my goodness… so delicious!  I visited the Weber Grill in Chicago (which was A-MAZING) so when I saw this seasoning in Publix, I was sold!  I coated the petite tender medallions beef shoulder pieces with olive oil and the seasoning.  I must say, that was a great decision!
